Fennel

Grown around the Mediterranean in particular, sweet fennel – "Foeniculum vulgare var. dulce" – is used like anise to stimulate digestion. The fruit and the root are harvested from the adult plant from which is extracted anethol, the prime component of its essential oil which has many properties.
