The lime tree or linden is, like the oak, a tree of legend.
A holy tree for ancient Germanic civilisations, the linden
plays a central role in our history and our countrysides.
Harvested in June in particular around Carpentras, the lime tree – Tilia tomentosa, Tilia cordata and Tilia platyphyllos – is an ancient production in the Baronies where the International Lime Tree fair is held on the first Wednesday in July.
Harvesting is a particularly delicate process. The flowers are harvested
when they start to blossom.
When used in infusion, lime blossom is calming and is often associated
with peppermint, verbena and lemon balm.
